  1. Take 1 Cup Chana dal, kali urad dal Arhar dal, masoor dal dhuli, moong sabit,

  3. Make ready to taste, Salt
  4. Prepare 1 tbsp oil,
  5. Get 1/2 tsp haldi powder,
  6. Get Pinch hing,
  7. Prepare For Tadka
  8. Take 3 tbsp desi ghee,
  9. Get Pinch Jeera,
  10. Get 2 dry red chilli,
  11. Take 1 small onion chopped finely,
  12. Get 1 garlic clove crushed,
  13. Take 1 Small pc of ginger crushed,
  14. Take 1 small tomato chopped finely,
  15. Prepare 1/2 tsp red chilli flakes,
  16. Prepare 1/4 tsp garam masala powder,
  17. Take 1 tbsp dahi,
  18. Get 1 tsp coconut milk

The Panchmel Dal is most often served along with Dal Baati, that is another popular dish from the Rajasthani Cuisine. Panchmel dal is a traditional Rajasthani dish which accompanies Bati and Churma and together the combination goes by the name 'Dal Bati Churma'. A mix of five lentils 'Panch' in Hindi means five. Panchmel dal is also referred to as Panchkuti dal, Pancharatna dal, and since it is a signature dish of Rajasthan, therefore, it is also known as Rajasthani Panchmel dal.

Instructions to make Panchmel Dal:
  1. First mix dals in the given ratio. Now take 1 bowl of the mix, wash it, soak in water overnight.
  2. Strain dal, keep aside. Take a pressure cooker, add soaked dal, add haldi powder, hing, salt & oil.
  3. Now add water accordingly so as to keep dal a lil thick. Cook it for at least 30 minutes.
  4. Cool it down. Now open the lid, whisk dal for a minute. Take out in a serving bowl, keep aside.
  5. For Tadka— Take a pan, add ghee, heat it.
  6. Add zeera & dry red chilli, sauté it till zeera splutters.
  7. Add onion, stir fry it until brown. Add ginger garlic, sauté it for a while.
  8. Add tomatoes, also add very lil water & salt, stir fry it until tomato becomes tender.
  9. Add chilli flakes & garam masala powder, stir it, mix curd & coconut milk, add in to the masala, stir it. Cook it till ghee separates.
  10. Now pour this into dal, leave it like this & cover it with the lid.
  11. Mix it while serving.
  12. Have it with Roti or Nan.
