  1. Take 1/2 kg mutton
  2. Get 2 onion
  3. Take 3 tomatoes
  4. Get 3 tablespoon oil

  6. Make ready 1/2 teaspoon salt or to taste
  7. Prepare 2 sprigs curry leaves
  8. Prepare 1 fistful coriander leaves
  9. Make ready 7 green chillies (masala to grind are as follows)
  10. Prepare 1 inch ginger
  11. Make ready 5 garlic
  12. Take 4 cloves
  13. Prepare 1 inch cinnamon
  14. Get 1 teaspoon fennel seed
  15. Prepare 1/2 onion chopped
  16. Prepare 1 cup coconut grated
  17. Take 3 tablespoon coriander seeds(dhania)
  18. Take 5 cups water

Splutter cumin seeds, fennel seeds, curry leaves along with all garam masala (bay leaf, cloves, cinnamon, cardamom, kalpasi) let it fry a bit. Add in chopped onions, green chilli and ginger garlic paste. To Make the Mutton Korma In a large pan, add the ghee. When the ghee is hot, add the chopped onion and fry until light brown.

Instructions to make Green Chilli Mutton Kurma(Hand pound Masalas):
  1. Firstly,get ready with all the masalas to grind. In a wok add one teaspoon oil and fry green chillies separately.
  2. In a grinding stone,add fried green chillies, fennel seeds,cloves and cinnamon and grind to coarse paste. To it add chopped onion,ginger and garlic and grind to smooth paste.
  3. Transfer the ground paste to a bowl.
  4. In another wok add a teaspoon of oil and fry coriander seeds for a minute. Keep it aside. Let it cool.
  5. Add grated coconut and grind coarsely by adding little water. To it,add cooled fried coriander seeds and grind to a fine paste as shown. Transfer and keep it in a separate bowl.
  6. Heat oil in a mud pot on a medium heat. Add chopped onion and saute until translucent. Add ground chilli paste mixture and saute until raw smell disappear. Now add chopped tomatoes and saute till tomatoes turn mushy and combines well withChilli paste.
  7. Add 1/2 kg meat(goat kid ( tender ones), turmeric powder and salt to taste. Mix well till meat turns pale in colour.
  8. Add four cups of water and cover the pot with a lid. Let it cook for 30 minutes on low heat.
  9. When it starts to boil well,stir occasionally. When the meat is well cooked add ground coconut coriander paste and mix well with little water.
  10. Let it cook for few minutes until oil starts to float above. Garnish with curry leaves and coriander leaves.
  11. Yummy Green Chilli Mutton Kurma is ready in an earthen mud pot. It goes well with steamed rice or any rotis. Being a heirloom recipe of my family, I learnt it from my Amma and still follow all the steps and prepare this authentic recipe.

To Make the Mutton Korma In a large pan, add the ghee. When the ghee is hot, add the chopped onion and fry until light brown. Add the ginger paste, garlic paste, and green chili to the onion and fry for a minute on medium heat. Wash the mutton well and drain the water. Put it in a a bowl for marination.
