Set out the beef in the slow cooker on warm, along with tortillas, bowls of shredded cheese, salsa, sour cream, and chopped lettuce, jalapenos, onions and tomatoes. Top them off with lettuce, sour cream, cheese, and wrap up in a soft shell. Top each with beef, Cheddar cheese and onions.   3. Place chicken breast in frying pan, sear outside, reduce heat, and cook until internal temperature is 165°F.
  4. Dice tomato and jalepeño. Cut red pepper, green pepper, and onion into thin strips.
  5. Add veggies to frying pan with 2 tbsp oil. Sautée until soft.
  6. Cut 2, 12" sections of aluminum foil. Pre-heat oven to 350°F.

  8. Wrap burritos in aluminum foil, and cook in oven for 10 minutes.

Top each with beef, Cheddar cheese and onions. Top with more lettuce, tomato, sour cream and dried chives, or your choice of toppings. Fold the sides and ends over filling and roll-up. Roll each tortilla into a burrito and wrap it tightly with aluminum foil. Then, spoon any left-over tomato sauce on top of burritos and sprinkle with Monterrey Jack Cheese.
