The ingredients needed to make White Girl Gumbo:
  1. Get 1 cup olive oil
  2. Prepare 1 cup flour
  3. Make ready 1 green bell pepper, diced
  4. Make ready 1 red bell pepper, diced
  5. Prepare 3 jalape??o, diced
  6. Make ready 1 medium onion, chopped
  7. Take 3 stalks celery, diced
  8. Prepare 1 packages smoked sausage (Louisiana if you can find it)
  9. Prepare 3 tsp minced garlic
  10. Take 3 tbsp creole or Cajun seasoning
  11. Prepare 6 cup chicken broth, add more if you need to thin it out more as you go along
  12. Take 1 rotisserie chicken (3-4 lb)
  13. Get 4 cup cooked rice, I prefer jasmine

Gumbo is traditionally served over steamed white rice (and sometimes potato salad!), with sliced scallions and hot sauce on the side. But there's another important finishing touch: Fil?? ("FEE-lay") powder, which is made from sassafras leaves. It is typically sprinkled on individual servings to thicken and season gumbo. This gumbo is the best I've made in a while, and I'll tell you what, it was even ready faster than the previous ones.

Instructions to make White Girl Gumbo:
  1. Heat oil in a Dutch oven or large pot. When oil is hot whisk flour in slowly.
  2. Continue whisking until a roux is formed and becomes the color of light chocolate milk. This takes approx 8 mins. Any black flecks in it and you need to start over.
  3. The roux is fairly thin right now. Don't worry, the next step thickens it right quick.
  4. Stir onion, peppers, celery and sausage into the roux. Cook five minutes.
  5. Add garlic, stir and cook another 5 minutes.
  6. Add creole/Cajun seasoning mix thoroughly.
  7. Pour in the chicken broth and give it a stir. Bring to a slow boil and reduce heat. Simmer uncovered 15 minutes. Stir often to avoid sticking to bottom of pan.
  8. Add your ripped apart chicken, stir and cook another 15 minutes. Stir and now is when you can decide if you need a bit more garlic or to add salt. I find smoked salt is best.
  9. Ladle on top of your cooked rice.

It is typically sprinkled on individual servings to thicken and season gumbo. This gumbo is the best I've made in a while, and I'll tell you what, it was even ready faster than the previous ones. I sure do wish it was stocked. Serve gumbo ladled over hot white rice in large shallow bowls, with hot sauce and file at the table for guests to use to their liking. Cook's Note: Gumbo thickness is a matter of personal preference.
