  1. Boil barley in water over high heat, after 1 boil keep it on slow for 20-25 mins or until done.
  2. In a pan, take butter put garlic and cook until it starts to get golden from edges.
  3. Add onions and cook for 2 mins
  4. Put mushrooms and cook for couple of mins, add salt and pepper.
  5. Add barley (once cooked) and stir, add spinach, stir gently & add herbs
  6. If you like creamy you can add some white wine too and some cheese.
  7. Shave parmesan cheese on top before serving

Add the pearl barley and stir for a minute. It's high in fiber, low in fat, and tastes absolutely heavenly! Discard the vegetables and place the strained stock over very low heat to keep warm while you make the risotto. Make the "risotto": Wipe out the large pot you used to make the stock with a paper towel, then add the butter and melt over medium heat. Pearl barley risotto is a great alternative to traditional risotto that is wonderfully light while being highly nutritious.
