Orzo, also called Risoni is a type of short-cut pasta. It's usually made with white flour or whole grain flour. Although orzo looks similar to rice, it's not rice, it's just made into a shape of a large grain of rice. It's a type of Italian ' pastina ' or tiny pasta, that are used primarily in soups.

Instructions to make Lemon Orzo/ Mediterranean Rice:
  1. Rinse rice for 30 minutes / while they is soaking get pan hot w oil and sauté onion, shallot and orzo for 5 minutes. Then add garlic. Then add 2 cups chicken broth, and lemon juice and zest.
  2. Add rinsed rice, parsley and place in pinch of salt and sprinkle of Greek seasoning. Put lid on for 20 minutes on low. Stir once.
  3. Let rice rest off heat. Enjoy! Add fresh parsley!

A good quality orzo stays nice and firm with a chewy texture after cooking, which is surprising, considering its size. It's a great little shape for side dishes!
