combine flour, salt & pepper and thyme in bowl.
in large skillet, melt butter over medium heat.
dredge chicken in flour mixture on all sides and brown in skillet. set aside chicken and leave 1 tbls fat in skillet.
cook bacon in the skillet until crispy. crumble and save for topping.
add onion, bell pepper, celery, garlic, and tony's seasoning to skillet and saute for 7 minutes.
stir in tomatoes and juices, bring to a boil the turn down and simmer for 10 minutes.
season with salt and pepper and add chicken thighs back to mixture. let simmer, covered, for 45 minutes.
serve over white rice and sprinkle crumbled bacon over the top.
