After a few minutes, turn the tofu over, and give the potatoes a good stir. Slice the tofu and place in a lunchbox, pour the marinade on top, cover and place in the fridge for an hour. Heat a tablespoon of oil in a wok. Add the tofu, marinade, and sprinkle in the cornflour (can omit or use normal flour if you have none).

Instructions to make Stir-fry Tofu with Miso Marinade:
  1. Combine all marinade ingredients and tofu in a large bowl. Mix well and set aside for at least 30 mins
  2. Heat peanut oil in a wok over high heat. Add minced meat and stir well until thoroughly cooked, approx 1-2 mins.
  3. Add capsicums and stir-fry for approx 3 mins. Capsicums should be cooked but still crunchy.
  4. Add tofu mixture and stir through gently for approx 2 mins.
  5. Add frozen peas and stir for approx 30 seconds. Turn off heat, add spring onions and cashew nuts. Stir through the residual heat.
  6. Serve with brown rice.

Heat a tablespoon of oil in a wok. Add the tofu, marinade, and sprinkle in the cornflour (can omit or use normal flour if you have none). Add half of the oil mixture to a large nonstick skillet. Add the baby potatoes and the tofu, in one layer, and cook, covered, on a medium-high flame. After a few minutes, turn the tofu over, and give the potatoes a good stir.
