  2. Take 1/3 can coconut milk

  13. Prepare 2 slices galangal
  14. Take 1 tsp belachan powder / belachan
  15. Prepare Main
  16. Take 20 Fried anchovies
  17. Take 1 tsp salt
  18. Take 1 tbsp sugar
  19. Prepare 2 boiled egg
  20. Make ready 1 cucumber (sliced)
  21. Get 1/2 sweet onion (thinly sliced)
  22. Take peanuts
  23. Prepare Chicken
  24. Get 2 tbsp belachan
  25. Prepare 1 egg
  26. Get potato starch
  27. Take 1 chicken stock
  28. Prepare 1 tsp sugar
Steps to make Nasi Lemak:
  1. Marinate chicken for at least 2 hours.
  2. Cook rice in the rice cooker, add all ingredients (expect coconut milk) and 1 3/4 cup of water first to cook the rice.
  3. Once rice is cooked, open the lid and stir the rice and add coconut milk in. Heat for about 5 mins.
  4. Blend the ingredients for the sambal.
  5. In a pot, add sambal paste and oil.
  6. Then add the 1/2 onions, fried anchovies, salt and sugar. (do not add fried shallots, it will make it bitter!)
  7. Cover chicken with the potato starch and deep fried it.
  8. Cook the rice now.
  9. Serve rice with peanuts, cucumber, sambal and chicken.
