In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the soup, mushrooms, soy sauce and brown sugar. The pie pumpkin is perfect for stuffing. They are small and not to heavy- which means handling the pumpkin is a lot easier.

Steps to make Stuffed Pumpkin:
  1. Boil clean water. Add on top of your short grain rice. Cover for 30 minutes before use.

  6. Finally add the rice and the spices. Mix well then remove from the heat.
  7. Cut open your pumpkin or butternut squash. Clean the inside well. Fashion a lid to use for covering the rice.
  8. Stuff the meat and rice mix into the pumpkin. Cover with the lid. Hold the lid in place using toothpicks. Sprinkle the remaining amount of olive oil over the pumpkin.
  9. Place in the oven covered with aluminum foil for 2-3 hours at 180 degrees C.
  10. This how it looks after you remove the lid. The rice is soft and well cooked. The squash is tender. Enjoy!
