Steps to make Quinoa and Chickpea Bowl:
Rinse the quinoa thoroughly and drain well. Place in a saucepan with 3 cups of water. Bring to a boil and give it a quick stir with a fork. Reduce heat, cover, and simmer for approx 8-10 mins. The quinoa should be tender but not mushy. Drain well and leave to cool slightly.
Heat olive oil in a small pan or saucepan over low heat. Add the oregano and cumin. Give it a gentle stir to release the fragrance, approx 1 min. Turn off heat and leave to cool slightly.
Place the cucumber, cherry tomatoes, red onion, chickpeas, black olives, parsley, and feta cheese in a large mixing bowl. Season generously with black pepper and a pinch of salt. Combine the quinoa and olive oil mixture into the bowl and toss the ingredients together until well-combined.
Serve with a sprinkle of sunflower seeds. - [If desired, try toasting the sunflower seeds in a dry pan over medium-low heat beforehand for that extra flavour!]
