No matter how far I've traveled, I will always crave a humble bowl of koshari as served in the streets of Egypt. Lentils, rice and pasta are cooked and then served in a spicy tomato sauce.

The ingredients needed to make Koshari - Egyptian Dish:
  1. Prepare 1 cup Rice
  2. Prepare 1 cup Pasta (preferably macaroni pasta)
  3. Take 1 cup Brown lentils
  4. Get to taste Salt and black pepper
  5. Take For the sauce:
  6. Get 2 tbsp Veg. Oil
  7. Make ready 1 small Onion - diced finely
  8. Take 2 clove Garlic - diced finely
  9. Get 15 oz Tomato paste
  10. Make ready 400 grams Tomato paste
  11. Prepare to taste Any spices you wish to add
  12. Prepare 1/2 cup Water
  13. Prepare to taste Salt + pepper
  14. Make ready For crispy onion
  15. Prepare 2 large Onions
  16. Take Oil for deep frying the onions

Koshari (also spelled Koshary or Kushari) is the national dish of Egypt. It's served in virtually every Egyptian restaurant, in every Egyptian home, and on every Egyptian street corner. Street vendors serve the dish from carts to people eagerly waiting in line to eat this beloved and highly popular dish. Koshari is the ultimate Egyptian comfort food.

Steps to make Koshari - Egyptian Dish:
  1. Cook the lentils in just over a litre of salted water. Bring to boil and then reduce heat and simmer covered for 15-30 mins.
  2. When the lentils are tender add the rice to the lentils and let it simmer until it's cooked (you can add water if necessary.
  3. Cook the pasta in a different pot. Rinse and strain when done.
  4. For crispy onions
  5. Heat the oil and add the onions and fry until slightly browned. Using a slotted spoon to remove onions from oil and place on paper towels to drain and cool.
  6. For tomato sauce
  7. Heat the 2 tbsp of oil in a medium saucepan and add the diced onions and garlic and fry till light brown
  8. Immediately add the tomato paste
  9. And the spices you choose to add!
  10. Add the salt and pepper (to taste)
  11. Add the water and leave to simmer, reduce the heat to low and cover and simmer for 20 mins stirring occasionally
  12. For the finished dish:
  13. In one pot add the rice, lentils and pasta and toss and combine and serve from there.
  14. Add the rice, lentils, and pasta mix into a large bowl
  15. Then the tomato sauce on top
  16. Sprinkle some hot chili powder of you like spicy food
  17. Now add the crispy onion
  18. You can also top it with something like chickpeas
