The ingredients needed to make Handvo:
  1. Take 1 cup Rice of any variety
  2. Take 1/3 cup Chana dal
  3. Prepare 1/3 cup Masoor/Tur dal(split red/yellow lentil)

  5. Make ready 1 cup Yoghurt or curd
  6. Prepare 1/2 cup shredded Cabbage
  7. Prepare 1/2 cup shredded Carrots

  9. Get 1 handful minced Coriander leaves
  10. Make ready 2 sliced fresh green or red Chilli
  11. Prepare 1 teaspoon Chilli flakes
  12. Make ready 1/2 teaspoon Ginger paste
  13. Get 1/2 teaspoon crushed Cumin seed
  14. Make ready 2 teaspoon Vegetable oil
  15. Get 1 teaspoon Fruit salt or Eno
  16. Make ready 1 teaspoon Salt
  17. Get 1/2 teaspoon Sugar
  18. Make ready For tempering
  19. Prepare 1 tablespoon Vegetable oil
  20. Get 1 teaspoon Mustard oil
  21. Prepare 1 teaspoon Cumin seed
  22. Make ready 1 teaspoon white Sesame seeds
  23. Take 5-6 Curry leaves
  24. Take 1/4 tsp Hing/Asafoetida
  25. Prepare As required Little oil to brush the baking dish
Instructions to make Handvo:
  1. Soak rice and dal together for 3-4 hours.
  2. Drain water, add curd and blend to a slightly coarse paste.
  3. Transfer to a mixing bowl and add shredded cabbage, grated carrot, shredded spinach, minced coriander leaves and sliced fresh chillies.
  4. Also add  ginger paste, sugar, chilli flakes, crushed cumin seed, oil and salt.
  5. Mix well making sure the batter is slightly thick like idli batter consistency.
  6. Now add eno / fruit salt and mix gently. Note that you should add eno at the time of baking.
  7. Take a round baking dish, brush with little oil and transfer the batter to the dish.
  8. Heat oil and temper with mustard seeds, cumin seeds, sesame seeds, curry leaves and hing/asafoetida.
  9. Spread the tempering over the batter.
  10. Preheat oven at 180 degree C for 10 minutes.
  11. Bake the handvo or savoury cake for about 30 minutes or until a toothpick/ satay stick comes out clean.
  12. When the cake comes to room temperature remove the sides with a knife.
  13. Invert the cake to a serving dish.
  14. Cut in pieces and serve this healthy and delicious handvo with green/red chutneys or any kind of pickle.
