In Malayalam, 'unni' means small and 'appam' means rice cake. Today is Panguni Uthiram, the full moon day of the Tamil month of Panguni. Unniyappam is a very popular Kerala snack prepared from rice, sugar, jaggery and ghee. Keralites prepare it mainly during some festivals like Vishu, or during family rituals and functions.

Instructions to make Unniyappam:
  1. Wash and soak matta rice and red rice in water for 4-5 hrs.
  2. Melt jaggery with 1 cup of water and strain to remove impurities and keep aside.
  3. Fry the coconut pieces in ghee and coconut oil
  4. Grind the rice to a batter along with the jaggery and banana
  5. Add the ginger, cardamom powder, sesame seeds, the ghee fried coconut bits, salt and mix well
  6. Keep this batter in the fridge for fermentation for 5-6 hours.
  7. Heat equal amounts of ghee and coconut oil in a unniyappam or panniyaram kadai.
  8. Serve this while hot and enjoy the crispy, soft unniyappams
