Take Paneer
Get 12 oz paneer
Take 1 tsp. turmeric

Take 1 (16 oz) frozen chopped spinach. Thawed and drained
Take 1 bunch fenugreek leaves
Make ready 1 medium onion finely chopped
Take 1 TBS ginger
Get 2 diced tomatoes
Get 4 cloves garlic
Get 1 serrano pepper
Prepare 2 tsp garam masala
Make ready 2 taps coriander
Take 1 tsp cumin
Prepare 1/2 tsp turmeric
Take 1/2 cayenne
Take 1/2 cup greek yogurt or 1/2 cup heavy cream
Instructions to make Saag Paneer:
Chop paneer into 1/4 " cubes. Whisk together vegetable oil, turmeric, cayenne and salt and toss paneer in spices.
Saute paneer until toasted on both sides. Set aside.
Add onions and caramalize until toffee colored golden brown
Add garlic and ginger and heat additional 1-2 minutes.
Add tomatoes, spinach, fenugreek and remaining spices and heat until soft.
Set aside and cool
Spoon mixture into blender and blend until smooth.
Combine paneer into saag base and heat. Slowly stir in yogurt
Serve with rice and naan
