Cook till onions are soft and light pink in color. Now mix in grated beetroot and cook till soft. Now add spice powders (red chili powder, coriander powder and garam masala). Mix and cook for a minute.

Beetroot rice is a simple dish that is easy to prepare and you only need a few ingredients. It is also meat free and therefore perfect if you, like myself, are trying to reduce meat consumption. If you want to go vegan, you can leave out the goat's cheese too. Beetroot rice is an easy and quick lunch box recipe for kids with beetroot and rice.

Steps to make Beetroot rice:
  1. Cook the rice with a dash of salt & sugar and half a tablespoon of clarified butter
  2. Boil the beetroot, keep the water/ stalk, peel and grate the boiled beetroot and keep aside
  3. Take one tablespoon of cooking oil mixed with one tablespoon of clarified butter,cumin seeds, cinnamon stick and star anise and heat in a wok
  4. Add the green chillies, onions and carrots to sauté until onions are soft and pink
  5. Add cooked rice and grated beetroot with the stalk, mix well and let it cook for about 5 minutes
  6. Add salt and sugar to taste if required
  7. Serve hot or cold with curd

If you want to go vegan, you can leave out the goat's cheese too. Beetroot rice is an easy and quick lunch box recipe for kids with beetroot and rice. It is an excellent way to include beetroot in kids diet. Beetroot can be added to the fresh juices, salads, and soups. Meanwhile chop beetroot, potato,onion and green chillies.
