  1. Wash the spinach well, and blanch for 1-2 minutes in boiling water.  Drain of excess water very well.
  2. In a pot, sauté the onion and spring onions in the oil.
  3. Add the parsley, dill, spinach and sauté gently, finishing off with the wine.  When the wine has evaporated, add a little water and season with salt and pepper.
  4. Bring to boil, add the rice, and let simmer over low heat for approximately 20 minutes.
