  1. In a small sauce pan over medium heat, combine cherries and lemon juice. Cook, stirring ocassionally. Once it starts to boil, turn off the heat and mash the cherries with a fork (or a potato masher, which is considerably faster 🤣)
  2. Remove from the stove and add the honey, if using (I would recommend not going over 1 tbsp, but this is really up to everyone's taste 🥰) Mix well until the honey is dissolved into the jam.
  3. Add the chia seeds and mix thoroughly, let sit for 5-10 minutes. The seeds will absorb a lot of the moisture and act as a thickening agent for the jam. Transfer to an airtight jar or container and refrigerate until use. The jam will keep for a couple of weeks.
