Slice the tofu and place in a lunchbox, pour the marinade on top, cover and place in the fridge for an hour. Heat a tablespoon of oil in a wok. Add the tofu, marinade, and sprinkle in the cornflour (can omit or use normal flour if you have none). Add half of the oil mixture to a large nonstick skillet.

Steps to make Stir-fry Tofu with Miso Marinade:
  1. Combine all marinade ingredients and tofu in a large bowl. Mix well and set aside for at least 30 mins
  2. Heat peanut oil in a wok over high heat. Add minced meat and stir well until thoroughly cooked, approx 1-2 mins.
  3. Add capsicums and stir-fry for approx 3 mins. Capsicums should be cooked but still crunchy.
  4. Add tofu mixture and stir through gently for approx 2 mins.
  5. Add frozen peas and stir for approx 30 seconds. Turn off heat, add spring onions and cashew nuts. Stir through the residual heat.
  6. Serve with brown rice.

Add the tofu, marinade, and sprinkle in the cornflour (can omit or use normal flour if you have none). Add half of the oil mixture to a large nonstick skillet. Add the baby potatoes and the tofu, in one layer, and cook, covered, on a medium-high flame. After a few minutes, turn the tofu over, and give the potatoes a good stir. While the tofu is draining, prepare the marinade.
