Boil your mackerel with a pinch of seasoning and salt and pepper with thyme
Set aside once done and debone the fish..then mash it with a fork
Fry your onion till Translucent and add the mackerel into the onion add seasoning again if you wish
Stir fry on low heat then set aside
For the tamarind it is advisable to soak overnight to get the flavour out
Blend the tamarind on a high powered blender to remove pulp from seeds and set aside
Blend the cucumber, ginger, cloves, and also set aside
Mix the mixture together and sieve out the dirts..add your lime into it(to get maximum juice you can soak your lime in hot water first)..then refrigerate
For the dough..pour all the ingredients into a bowl and mix with little water and get a firm mixture..it shoul not be watery..
Cover it and let it rise for at least five minutes
Roll out your dough, fill it with the fillings and cover it lacing the end with water so it doesn't open when frying
Fry till light Brown
