Tzatziki is a Greek dip of pureed cucumber and yogurt. It's infinitely adaptable to whatever fresh herbs you have on hand - parsley, dill, oregano - but I'm particularly fond this version with mint. The cucumber and mint together are extra cooling. This is a lovely healthy option to serve with crackers or crudites.

  2. Prepare grated cucumber

If you've never had tzatziki sauce then you are missing out on a Greek delicacy. In America, this yogurt sauce studded with cucumbers, garlic, and lemon; is most commonly eaten atop gyros. Gyros are much like the familiar taco, but done Greek-style. The meat is often ground lamb, seasoned to perfection with onion, fresh herbs and lemon.

Instructions to make Mint Tzatziki:
  1. Peel and chopped cucumber into half. Scrap out middle seeds part.
  2. Grate and 1/2 tsp salt. Keep aside for 10 minutes. After 10 minutes, squeeze out water from grated cucumber.
  3. In mixing bowl add hung curd,grated/ squeezed cucumber, finely chopped fresh mint leaves,salt and pepper to taste, olive oil. Mix & whisk well to make smooth mixture.
  4. Pour in serving bowl. Garnish with red chilli flakes. Drizzle all over with olive oil, sprinkle finely chopped fresh mint leaves. Serve/ Relish Delicious Mint Tzatziki Dip with pita bread or french fries.

DIRECTIONS Put the garlic, lemon juice and olive oil in a small bowl and leave to one side. Peel alternate strips of skin from the cucumber (ie. peel a strip, miss a strip) and grate coarsely. Place the cucumber in a sieve and sprinkle with salt.
