The ingredients needed to make Tzatziki:

Directions In a medium bowl, combine yogurt, oil, and lemon juice. Season with salt, pepper, and a pinch of red pepper flakes. Fry up some zucchini or eggplant slices (dredge in flour and fried in olive oil) and serve with a dollop of tzatziki on top. Note: If I have time, I often lightly salt the grated cucumber and put in a colander to drain, then squeeze out water as per usual.

Instructions to make Tzatziki:
  1. Peel the cucumber and remove the seeds then cut it into small cubes or strips (or grate it), season with salt and set it aside with the salt for 15'.
  2. Then strain and squeeze it.
  3. Place the yogurt, the pepper and the herbs, finely chopped, in a bowl and add the oil, the garlic, crushed, as well as the cucumber. Mix with a wooden spoon until everything is evenly distributed and the mixture is well combined.

Fry up some zucchini or eggplant slices (dredge in flour and fried in olive oil) and serve with a dollop of tzatziki on top. Note: If I have time, I often lightly salt the grated cucumber and put in a colander to drain, then squeeze out water as per usual. Tzatziki is made simply with yogurt, drained cucumber, olive oil, fresh herbs (usually mint or dill), garlic, lemon juice and salt. It's a refreshing chilled sauce, dip or spread. I traveled to Greece last fall and ordered tzatziki at every restaurant.
